  • 2 eggs
  • 2 cups flour
  • 1 tbsp. baking powder
  • 1-1/2 tbsp. sugar
  • 1/2 tsp. salt
  • 1-3/4 cup milk
  • 6 tbsp. melted butter or margarine or vegetable oil


  1. Preheat the waffle iron. While it is heating, separate the eggs. Sift the flour, baking powder, sugar and salt into a large bowl. In another bowl, combine the egg yolks, milk, butter, margarine or oil. Add the yolk-milk mixture to the dry ingredients, beating well until the batter is smooth.

  2. Beat the egg whites until they form soft peaks. Fold them into the batter. Ladle the batter onto the waffle iron, close the iron, and bake until the steam stops rising. When you open the iron, the waffle should be golden brown. Makes 8 waffles.

  3. Variations: For Pecan Waffles, fold 1 cup chopped pecans into the batter before spooning it onto the waffle iron.

  4. For Bacon Waffles, cook 4 strips bacon until they are dark and crisp. Drain on paper towels, crumble, and add to the batter before you spoon it on the waffle iron.
